Our Pinot Noir / Rondo blend takes its namesake from the historic St Edmundsbury Cathedral, which once grew vines within its abbey walls. In the medieval period, a third of the tithe to Rome was paid in hogsheads of wine. It is this heritage which has inspired our best-selling English red.
Our award winning red is a vibrant blend of Pinot Noir and Rondo. The grapes are hand picked and go through cool temperature maceration separately in old oak barrels for three days.
Fermentation then takes place over 10 days in the barrel at 25 - 28 degrees before being pressed and transferred to stainless steel to rest for a week. We then age in old oak barrels for a minimum of 10 months before blending and bottling.
