Our award winning red is a vibrant blend of Pinot Noir and Rondo which takes its name from the historic St Edmundsbury Cathedral which once grew vines within its abbey walls. In the medieval period, a third of the tithe to Rome was paid in hogsheads of wine. It is this heritage which has inspired our best-selling English red.

Our award winning red is a vibrant blend of Pinot Noir and Rondo. The grapes are hand picked and go through cool temperature maceration separately in old oak barrels for three days.

Fermentation then takes place  over 10 days in the barrel at 25 - 28 degrees before being pressed and transferred to stainless steel to rest for a week. We then age in old oak barrels for a minimum of 10 months before blending and bottling.

  • Appearance

A beautiful deep rich purple inky hue that’s vibrant and inviting.

  • Aroma (Nose)

On the nose, it’s a mix of fresh red fruit—think redcurrants and and raspberries—with a subtle hint of vanilla. There's also a touch of earthiness, like freshly tilled soil or a whisper of spice, which adds a nice layer of complexity.

  • Palate (Taste)

Light to medium-bodied, with bright, juicy flavours of red berries—especially blackcurrant, cherry and plum. The Pinot Noir brings its trademark elegance and silky texture, while the Rondo adds a bit more fruit-forward punch. There’s a nice balance of fruit and subtle tannins, making it smooth and easy to drink.

  • Body

Smooth and silky on the palate, with just the right amount of acidity to keep it refreshing and lively.

A clean, dry finish with lingering berry notes that invite you to take another sip.

This blend of Pinot Noir and Rondo’s fruit-forward and earthy qualities makes it quite versatile, pairing beautifully with a range of dishes that have both savoury and slightly sweet elements.

-Roast chicken with herbs like rosemary and thyme. Or why not try grilled lamb chops or steak, especially with a peppercorn crust or a berry sauce.

-Pasta with rich tomato sauce or spaghetti bolognese. The acidity in the wine balances the savoury tomato base. Mushroom risotto or pasta with creamy sauces that bring out the wine’s smooth texture.
